Halibut With Fresh Tomato Sauce
INGREDIENTS :
2 large ripe tomatoes, ~ diced
1/4 cup fresh basil, ~chopped
3 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1/2 lemon, juice
1 tbsp garlic, minced
4 halibut steaks
3 tbsp vegetable oil
salt and pepper to taste
METHOD :
1. Combine tomatoes,basil, olive oil, vinegar lemon juice and garlic in a bowl. Set aside.
2. Rub fish with vegetable oil and season with salt and pepper.
3. Grill fish over medium-high fire about 5 minutes per side or until fish springs back when pushed with a finger.
4. If a barbecue is not available, cook on hot oil in a skillet for 3 minutes on each side and then put the skillet in the oven and cook for an extra 5-10 minutes.
5. Spoon some tomato sauce on 4 plates.
6. Put fish on sauce.
