Chicken & Cheese Tortellini
Tortellini is a favourite for even the pickiest of children.
Most kids like pesto,especially if you add extra Parmesan cheese.
Ingredients:
* 4 oz boneless chicken breast
* 12 oz tortellini
* 1/3 cup pesto
* 2 tbsp grated Parmesan cheese
1. In a small, nonstick skillet lightly coated with cooking spray, add the chicken and saute for 4 minutes perside or just until no longer pink.
Let cool, then dice.
2. Meanwhile, boil tortellini for 8 minutes or until tender.
Drain and place in a serving bowl.
3. Add the chicken, pesto and Parmesan cheese and toss well.
Nutritional analysis:
* 354 calories; 20g protein; 41g carbohydrates; 1.8 fibre; 12g fat; 4.9g saturated fat; 56mg cholesterol; 548mg sodium.
